Welcome to the forum.Glad you decided to join us. You would have to gedify your Xoom to the US version and then ICS would update normally.

My Xoom is a UK model and I used the tutorial found on XDA. You should use the alternative ADB setup which is also found via XDA. Just follow the steps to the letter and you will be fine. It's not really worth going for stock ICS as the custom roms are great with additional tweaks and they're just as stable.

Perhaps this one will work. I used it for the US 4G LTE but it has others.
