Thank you very much for this really useful, precise and easy guide! Helped me to root my Xoom a bit ago.
Recently, I was offered an update via OTA (most likely ICS as I was on 3.2 with all minor updates on my MZ601 already).
Since I was rooted I just reverted back to stock today and then went through all OTA updates.
However, at 3.2 (H6.5-17-3) it now says that my device is up to date whenever I run an update check. Is there anything I need to do or is it just a matter of waiting or something?

Why should you reverted back just to get OTA for ICS?
You just 1 step away to the awesomeness... when you in rooted stage!

Because according to your posting there's no other way to "unroot".
I wanted ICS for Chrome mostly and I really like official updates.
Custom ROMs (at least some of them) tend to be overloaded with zillion extra features I might not need/want. That made me prefer staying close to stock ROM.You just 1 step away to the awesomeness... when you in rooted stage!

Nah...you have the latest 4.1.1 firmware (Jelly Bean) with great features implemented by our best Xoom developers.Might not be so much the case for Team EOS, who knows. Yet this custom ROM might contain bugs still or some things might not be working such as 3G, camera or so (or is there a full released version yet and not just betas?).
Ah yeah, forgot to mention in previous posting: I was in Ireland when I received the OTA offer. In Germany I reverted back to stock ROM and no offer. Now in Austria I didn't get an update either until today (so I doubt it is related to the country change). Anyways, I am now on ICS finally and here comes my next issue:2 option:

If I root the device, I would have to go all the way back to 3.0 again when JB is released officially (heard some rumors the 3G Xoom will get it too?). Sadly, there seems to be no other way to unroot. So in case I wouldn't go for a custom JB ROM:
Is it possible to do a nanddump with standard recovery mode or something that requires no root/custom rom?
The only way to unroot is to fastboot the stock images, if your xoom is wifi you can fastboot the US wifi images and have stock JB or you can root and run a custom rom. The custom roms are IMHO as stable as stock with many more features.
