I do not take credit for this but someone over at XDA Developers has found a way to root the wifi only xoom.
Basically you have to flash Tiamat's boot.img instead of Koush's rootboot.img (which seems to be soft bricking xooms). Check out the 2 threads below and it should give you more information.
Disclaimer: I haven't personally tested this out yet since I don't have my wifi xoom yet but from reading around the xda forums, this seems to be the way to root and the solution for those to unbrick their soft brick xooms.

The files in the "xoomwifiroot.zip" are basically tiamat's files with added superuser program files from Koush's root files.

I'm waiting for noob instructions. I've rooted my Droid X, my NookColor, and my HP printer tablet, but on XDA, I have absolutely no idea what to do with the files I downloaded for rooting the Xoom. I really wanted to do it today, but I need step by step instructions, or I'll have to wait for a one-click. Sigh...
