Unfortunately, I suspect that the bootloader of this model or fw (ICS 4.04) can't to unlock and I can't to find resolving for reversible root.
Unlocked for doing so: How to: Unlock the Motorola XOOM Bootloader – Droid Life and I haven't error or warning message.
I have no experience with Linux. One question, is your Xoom the OG Xoom or one of the later versions. AFAIK the OG Xoom is the only one you can unlock the bootloader.

    Was apparently successful unlock:

    root@ASUS:# fastboot oem unlock
    ...
(bootloader) To continue, follow instructions on the device's display...

I set on tablet: Accept ... Accept , and the tablet restarted with clear system.
    But no effect...

    root@ASUS:~# adb devices
    List of devices attached
    043c718341206517 device

    root@ASUS:~# adb remount /system
    remount failed: Operation not permitted

and that's it. I do not know what to do.

You can root it or install one of the pre-rooted roms. I believe all the Team Eos roms are pre rooted. Here is the JB rom.

Thank you very much, but as I wrote, I would like to keep the stock rom, just rooted for different backups, for example nandroid and Titanium.

If you're unlocked just go to step 2 and 3 to fastboot a custom recovery and flash the root.zip. As long as you stay rooted stock you cannot accept any OTA, it will mess your Xoom up.

Thanks, I will an probe maybe tomorrow. And when needed I return the stock rom via 'MZ601_H.6.1-38-1_Retail_Europe' rom and 4x update to 4.04.

What do you mean by pre-rooted ROM? You can install the EOS rom without Rooting?

The 2.0 EOS rom all you had to do was unlock your Xoom and flash the rom and gapps and you were rooted. I'm not sure on the 3.0 but if it's like 2.0 it's all ready rooted.
