There are several. You have the Team EOS stable.

There's the Team EOS nightlies which I use and consider stable.
[ROM][Nightly][ICS] Team EOS(Tiamat)(Motorola Xoom Wifi Only)
And there's the Unofficial CM9.

Always make a backup first, all of these roms you need to flash the rom and then the gapps. Also while in recovery you'll need to wipe the cache partition, wipe the dalvik cache and wipe data/factory reset or you'll end up in a bootloop.

I completed all if the steps in the Universal Root, but I cannot get Busybox to acknowledge that I am rooted or a superuser, therefore, it will not install...any ideas why?

Some apps say I am rooted (Terminal Emulator), but Busybox says that it's granted access. I completed all of the steps without any errors on 4G Xoom running 3.2.6...what else could be wrong?
1) Launch superuser and update
2) Install this: >> Quickboot <<
Try to reboot your Xoom with Quickboot, if it can reboot with Quickboot...nothing wrong with your root
Thanks for all the help...I am rooted and loving every minute of it...it is like having a new tablet, since my Xoom has never been this fast.
