For those that may be interested in this mod...here is the arrow file that I ended up using. I just put it into the framework-res.apk file directly. Whenever I attempted to open it up in a viewer/paint program first, it ended up generating a black square background on it.

Yea, that's because it has a transparent background and the paint program made it opaque. You need something that can deal with that, like Photoshop or even Irfanview, which is what I use.
But, yea... that is a cool cursor.

"Simple" instructions (assuming you already have moto drivers and adb installed on PC in the c:\android folder): (all commands are minus the quotation marks)
...AFTER A XOOM BACKUP OF COURSE ! ...
    1. Attach Xoom to PC, and run command prompt (easiest for all win is windows key+r, then "cmd" and click OK)
    2. Type "adb pull /system/framework/framework-res.apk c:\android\framework-res.apk" (this copies the file from the xoom folder its in). Make a copy of this original framework file and save it somewhere in case you need it!
    3. Open the file you just copied to the PC android directory with an appropriate archive program (I used WinRar)
    4. Open the "Res/drawable-mdpi/" folder
    5. Locate a mouse arrow image to your liking. Use the one I posted or use whatever .PNG file you like. Just be sure to keep in mind the size/transparency (see above posts). This file needs to be named as "pointer_arrow" and with a .PNG extension.
    6. Copy (or drag in most cases) that file into the open archive of the framework-res.apk file. This will overwrite the existing arrow image.
    7. Close the archive, saving the file change just made. Make sure its still named "framework-res.apk"
    8. Back in the command window, type "adb remount" This makes the Xoom system folder writable.
    9. Type "adb push c:\android\framework-res.apk /system/framework/framework-res.apk" (this overwrites the framework file on the Xoom)
    10. After the file has finished transferring, you may see a force-close error on the Xoom. DONT CLICK ANYTHING ON THE XOOM...
    11. Hard reboot the xoom (push and hold power button, and press and hold volume up)
    12. Xoom will restart....and you should be good to go!

I did some research on how to display a cursor on Android. As a result of that, and thanks to popular request, I finally developed a freeware Android app, for Android OS 4.0 or newer that lets you choose a customized, bigger size cursor. It can be used both with OTG Cable/USB Mouses and with Bluetooth mouses. Those interested can find it on Google play, search for BigMouse. The good news is it doesn't need root! So it's just a user-level app that does all the job easy.
Link to original article / research work here: Android Overlay Mouse Cursor PocketMagic (if not ok with site rules, please remove the link, but leave the rest, as it answers the question, and solves the cursor problem). Let me know how it works on your devices, I tested it on several, both phones and tablets.
