Drocap2 or ShootMe should work for rooted devices. I preffer ShootMe myself.

I prefer ShootMe too, if anyone is interested I have a hacked version that records video at 30, 45, and 60 framerations as opposed to the stock 5, 10, and 15

You need root to be able to use the screen capture ability.
