I can see the SD Card being mounted as "/mnt/external1/" but nothing when I insert a USB stick.

There should be a folder called USBOTG.

Any idea? The stick is 1GB FAT formatted and worked fine to apply the 3.2 update so I assume it's not the stick or cable.
Given you need to mount the SD card in settings, do I need to install something and/or enable root access?
You can only get USB mass storage capability by rooting.
USB functionality was introduced in 3.1. It has to be formatted using the FAT file system. I think I read that 3.2 may have removed it.

As Zammo stated, the only way to mount a usb device(other than a camera) is to Root your xoom then using any root accessible file manager (like root explorer) you can access these directories on your device. I am not certain if you have to install a new kernel or not being as i am not currently a root user on my xoom (keeping it stock while i root my phones)
Not true. You cannot mount NTFS drives without root, but you can mount FAT drives.

So without root or custom kernel, is it possible to see a FAT formatted USB drive using a OTG cable?
I would say no (or at least I can't)
Given I can navigate to /mnt/ and see the folders without root, I don't think root access would help.
Has anyone without stock 3.1 or 3.2 mounted a USB drive? If so, how?
Does a USB mouse work with your OTG? Do you have USBdebugging enabled on the Xoom?
