You can install Root only apps, and you need root to flash roms(a modified OS).
New to Android or just need a refresher course, Abe has you covered

Screen Shot apps, Titanium backup (A must have when roming) To back up all your apps, There are some ad blockers, Tether apps for sharing the internet connection of your Xoom with other devices if you have a data plan with Verizon.
There are more but thats what I can think of of the top of my head.New to Android or just need a refresher course, Abe has you covered

Not paid ones for free like they do with jailbroken iDevices, more like applications that require complete system access and open the true possibilities of your device

Using a custom ROM you can completely change the look and feel of the entire thing.
