After rooting and trying different kernels there is quite a bit difference in performance. The two newest kernels Tiamat and Launchpad are both able to overclcok to 1.7 now. It's been reported that some some Xooms have problems above 1.6, I guess I'm just lucky mine runs fine at 1.7. I have used both of the kernels and in my perception Tiamat seems a little faster to me.

Flash performance has been greatly improved. Now Flash is 98% of what it is on my desktop. I can play Flash games, watch HD Flash videos, and interact with Flash interactive content smoothly.
Rendering PDF's became smoother.
The more intensive emulators that skipped/shuttered a little before are now silky smooth.
Overall the interface is just more smooth on everything as well.
Battery life can be increased as well by underclocking when you need it. For example I clock all the way down to to 456mhz when I am just going to be watching SD videos or something (like on an airplane). Performance on everything else suffers, but battery life increases significantly. If watching HD videos, 600mhz normally plays smooth.
