    Here's one way, download spare parts from the market, free, and disable compatibility mode the apps will go fullscreen.

    the newest version of Honeycomb (3.2) has a stretch to fullscreen feature built in.

    since i am new (reasonably at least) with my XOOM, i guess that's why i couldn't figure out why someone would ask that question, lol. i only played with 3.1 for about 10 minutes before taking the 3.2 update and rooting my xoom, lol.

    Gotta love Spare Parts - some nice tweaks. And 3.2 does include this, so if you haven't updated, that is one of the perks. 'Course, if you are non-US, that is an issue.
